WhistlePig 15 Year Old Straight Rye Whiskey is a highly sought-after American spirit among collectors and expert whiskey tasters. Founded in 2007 and based on a historic Vermont farm, WhistlePig has focused exclusively on rye whiskey production. While the distillery's more mature expressions currently use rye from an undisclosed distillery in Alberta, Canada, this particular release is the first to be aged in Vermont oak barrels.
This 15-year-old expression, the oldest from WhistlePig to date, starts its aging process in new American oak barrels before being finished for an additional six months in heavily charred white oak barrels, harvested from the Bhakta farm in Vermont. The dense wood grain from these Vermont oaks, influenced by the region's harsh winters and shorter growing seasons, imparts a nuanced and distinct flavor to the whiskey.
The whiskey has a rich aroma of roasted chestnut, with prominent notes of oak and toffee. The oak used in the barrels comes from WhistlePig's farm grounds, and the barrels themselves were designed by Master Distiller Dave Pickerell. The sustainably harvested wood has narrower rings than classic American oak, providing more flavor as the whiskey matures.
Crafted with a rare 100% rye mashbill, WhistlePig 15 Year Old Straight Rye Whiskey was initially aged in classic American white oak barrels before receiving its final finish in Vermont oak. Bottled at 92 proof (46% ABV) and Kosher certified, it offers a tasting experience with subtle and nuanced flavors. On the palate, notes of lemon peel blend beautifully with cloves, caramel, black pepper, and leather, leading to an earthy and bittersweet finish with strong notes of chocolate almonds.
