The Partida family has been crafting agave spirits in Zapotitlan de Vadillo, Jalisco, for five generations. Due to their location and the specific agave varieties they use, they can't officially label their spirits as Mezcal or Tequila; instead, they are classified as "Destilado de Agave." On their property, they cultivate 14 different varietals of Agave Angustifolia and a few Agave Rhodacantha. All their agaves are left as "Capón" before harvesting. This process involves allowing the plant to start growing a flowering stalk, then cutting off the quiote and leaving the plant in the ground for an additional 1-3 years. This halts the flowering process, preserving the fermentable sugars needed for production and enhancing the flavor and character of the piña. This labor-intensive method results in agaves with remarkable flavor.
Brocha, a type of Agave Angustifolia closely related to Espadín, is one of their offerings. It is characterized by a dominant mint aroma and flavor, complemented by a hint of pastry-like sweetness and richness.
