Winemaker Notes
This sparkling wine is made by the classic ‘méthode traditionnelle’ which is the same method used in Champagne. Only the finest and ripest grapes were selected, delicately pressed and fermented in stainless steel tanks to retain the purity of fruit. The ‘liqueur de tirage’ of sugar and yeast was added before the wine was bottled, where it underwent the secondary fermentation creating the delicate and fine bubbles characterised by méthode traditionnelle sparkling wines. The wines underwent ‘remuage’, the process by which the bottles are twisted to compact and later facilitate the removal of any sediment. The wine was kept on its fine lees for eight to 10 months, prior to being disgorged. The bottles were topped up with the ‘liqueur de dosage’ resulting in a residual sugar of 11 grams per litre.
This delicious sparkling wine offers an abundance of fine, delicate bubbles and displays great finesse, elegance and complexity with flavours of citrus fruits and apple through to a fresh, crisp finish.
