Fidencio Madrecuixe
Fidencio Madrecuixe
About this Mezcal
Fidencio Madrecuixe is crafted using wild maguey Madrecuixe, which is harvested after 12-15 years of growth. The agave is pit-roasted over black oak for five days before being double distilled. Mezcalero Enrique Jimenez produces this mezcal in Santiago Matatlán, Oaxaca. It has a vegetal and floral aroma, with bold yet balanced smoke and a hint of acidity. Tasting notes include leather and caramel.
Fidencio Mezcal
With four generations of expertise, Fidencio Mezcal uses estate-grown agave to create their spirits. Their distillery, Fabrica de Amigo del Mezcal, has been producing mezcal for over a century. Fidencio Jiménez, the brand's namesake, began making mezcal more than 100 years ago after moving to Santiago Matatlán, Oaxaca. He learned the craft through trial and error and by collaborating with peers, passing his knowledge to his son Enrique. In the early days, they used natural materials like clay pots for fermentation, distillation, and storage, and river reeds for tubing.
For more on the Jimenez family's history, you can read "The Story of Isaac Jimenez" by Alvin Starkman, owner of Mezcal Educational Excursions of Oaxaca. Fidencio is made by the same family behind El Buho. Due to the artisanal nature of their mezcal, the ABV may vary slightly between batches.
